Bush Campfire Damper
There is nothing more iconic than Bush Campfire Damper. A staple for swagmen, drovers, stockmen, and travelers in years gone by, now a camping tradition for families exploring the bush.
The rules are simple. Damper may only be cooked over campfire coals or a cast iron pot, and, must only be served with sickly amounts of golden syrup orrrr alongside a camp oven stew (personally, we prefer the former, with a hot cuppa).
Here is a family recipe, that has been passed down the generations, with a few tweaks here and there no doubt.

Ingredients
3 cups self-raising flour
1 teaspoon salt
1 cup of milk
1 teaspoon of butter
sprinkle of sugar
Method
Simply mix together the dry ingredients in a bowl, form a well in the middle & add milk and butter. Knead for about 5 minutes, or until a nice dough forms. Shape into a flattened ball.
If you are using a cast-iron pot, line with butter and place the dough inside. Cook for roughly 30 minutes over coals until golden and crunchy on the outside. If you don’t have a cast-iron pot handy, wrap the dough in a double layer of greased foil instead. Place it in the coals on the edge of your campfire, cook for roughly 30 minutes & hope that it is done ;)
