Garlic Scape Pesto

This vibrant green pesto is a fantastic way to savour the fleeting season of garlic scapes. It's incredibly versatile, adding a burst of flavour to a variety of dishes.

P.S. Just in case you are wondering…Garlic scapes are the curly flower stalks of garlic plants. They are a true reflection of seasonal eating, as they are only available for a short window of about four weeks each year, typically in November. Not only are they delicious, but they're also packed with flavour and nutrients. Plus, they're FODMAP-friendly, making them a great option for those with digestive sensitivities.

Ingredients

50g basil
100g lightly toasted pine nuts
Juice and zest of one lemon
3/4 cup olive oil
50g grated Parmesan
A generous pinch of salt

Method

Combine all ingredients to a food processor and pulse until you reach a semi-smooth consistency.  For a looser pesto, add a splash of water.

Store in the fridge and use within a week or freeze.

Pasta: Toss with your favourite pasta for a quick and delicious meal.

Pizza: Dollop onto pizza for a flavourful topping.

Grilled Meats: Serve as a side dish to grilled lamb chops or steak.
